Ingredients for the Brownies:

  • 1 cup of butter
  • 8oz of semi-sweet chocolate, chopped
  • 1.5 cups of granulated sugar
  • 0.5 cups of light brown sugar

  • 2tsp vanilla extract

  • Flatten the other 30 balls and put on the top of the cookies, sealing the edges to avoid losing any of the saucy goodness
  • Bake for 8 minutes and place on a cookie sheet to cool

  • ¼ cup of superfine sugar
  • 2tbsp melted butter


  • Preheat the oven to 450F and line a jelly roll pan with parchment paper

  • Whip the egg whites separately to create a foamy mixture and then add the superfine sugar until it’s a shiny meringue
  • Fold the egg whites into the almond flour mixture

  • 2tsp powdered gelatin
  • 2tbsp cold water

  • ½ cup of sugar
  • ½ cup of hot milk
  • 8oz white chocolate, chopped
  • 1tsp mint extract
  • Green food coloring, optional
  • 1 ½ cups of whipping cream


  • Add 2tbsp of water to a saucepan and sprinkle the gelatin over, allowing to stand for a minute
  • Whisk the eggs yolks with the sugar and then stir in the hot milk
  • Cook over medium heat for about 10 minutes until thickened, whisking constantly
  • Stir in melted chocolate and blend until there’s an even color
  • Add in the mint extract and food coloring
  • Whip your cream until stiff peaks form and then fold into the mixture, blending completely

Ingredients for Assembly:

  • 1/2 cup of white chocolate
  • 1 chocolate transfer sheet
  • 1 cup of whipped cream, already prepared
  • Chocolate curls or shavings


  • Place the cake in a springform cake pan and pour the mousse over the top
  • Place in the freezer until firm and then remove from the pan

Let’s finish with the hardest dessert of the lot, although not as hard as you would initially think. It’s time to create your cheesecake with a delicious mint chocolate flavoring. Yes, you get to pull out the Oreos again.


  • 15 Oreo cookies
  • 10 Keebler Grasshopper fudge mint cookies
  • 5tbsp butter, melted
  • 24 oz cream cheese, softened
  • 14oz condensed milk
  • 3 eggs
  • 1tbsp Crème de Menthe
  • 1tsp peppermint extract
  • 1/2tsp green food coloring
  • 2 cups semi-sweet chocolate chips
  • 1tsp flour
  • 1tbsp milk


  • Preheat the oven to 300F
  • Combine the two sets of cookies in a food processor and pulse into find crumbs
  • Add in the butter and pulse until the crumbs are moistened
  • Press the cookies into the bottom of a springform pan and put to one side
  • Beat the cream cheese until fluffy and light and then add in the condensed milk, mixing until incorporated
  • Add in the eggs and mix again, before adding in the Crème de Menthe, food coloring, and peppermint extract
  • In a bowl, mix a cup of chocolate chips with flour and coat, adding them to the cream cheese and stirring to combine
  • Pour on top of the cookie base and top with half a cup of chocolate chips
  • Bake for an hour
  • Immediately get the cheesecake out of the tin and allow to cool, putting in the fridge until you’re ready to serve
  • Microwave the last half cup of chocolate chips just before serving to melt and drizzle over the top of the served cheesecake slices

This is the unhealthiest dessert on the list, but it’s one of those everyone will love. The kids will have fun mixing everything together. You can even let them start the crushing of the cookies before you pulse in a food processor.
