  • 6 jalapeno peppers
  • 4oz cream cheese
  • 2tbsp cheddar cheese, grated
  • 6 strips of bacon, halved

  • 1tbsp chili seasoning mix

Method:

  • Preheat the oven to 350F and grease a baking pan
  • Cut the jalapeños in half and remove the seeds, and then put to one side
  • Beat the cheese together in a bowl and then spoon into the pepper halves
  • Wrap bacon around each pepper half
  • Mix the brown sugar and chili seasoning in a bowl and then coat the peppers
  • Place on the baking tray and bake for about 20 minutes, until the bacon is firm

If the jalapeño peppers are too much, try using small bell peppers. These don’t have as much of a kick and are more likely enjoyed by all your guests. You can always make both types of peppers to offer something for all guest preferences.

Cheesy Stuffed Cherry Tomatoes

It’s time to pull out the cherry tomatoes and use them for your appetizers. These will make excellent canapes for your cocktail party needs, but they can also technically be classed as vegetable appetizers—see where the problem between the lines is?

These cherry tomatoes are easy to eat in one or two bites. Your guests will look around for more, so keep them coming!

  • 16-20 cherry tomatoes

  • 3tbsp parmesan cheese

Method:

  • Slice the top off each tomato and remove the middle
  • Invert the tomatoes on paper towels to let all the juices drain out
  • Mix the rest of the ingredients in a bowl and then place in the tomatoes
  • Refrigerate for a few hours and serve cold

You’ll get as many appetizers as the cherry tomatoes that you use. If you need more, use more of the ingredients. Don’t be tempted to overflow your cherry tomatoes with the stuffing.

If your cherry tomatoes don’t sit up right, slice a very little bit off the bottom. You don’t want to create a hole. You just want to make the bottom flat.
